2 x 135g packs Hartley’s Lemon Jelly Cubes
500ml fizzy lemonade, chilled
200g fresh blueberries
Mint leaves for decoration
1 1/2 litre jelly mould
Separate the jelly into cubes and place in a large jug. Add 285 ml of boiling water and dissolve.
Put in the fridge until just beginning to set, and clinging to the sides of the jug.
Add the chilled lemonade.
Put in the fridge to set.
When the bubbles have subsided and the jelly is beginning to thicken, give a good beat to create air bubbles.
Pour the jelly into the mould.
Put in the fridge to set. To serve, dip the mould in hot water for a few seconds and tip onto a serving plate. Fill the centre with blueberries and mint.
