2 x 135g pack Hartley’s Strawberry Jelly Cubes
100g mini marshmallows
2 x 12g sachet gelatin powder
200ml condensed milk
28cm x 18cm x 3cm baking tin
To make the jelly, separate the jelly into cubes and place in a jug/bowl. Add 300ml boiling water and stir until dissolved.
Pour the jelly into the baking tin
Put in the fridge to set.
To make the marshmallow layer, place the gelatine in a jug and add 100ml boiling water. Whisk until dissolved. Add 200ml condensed milk and 100g marshmallows. Melt in the microwave, stirring every 30 seconds.
Allow to cool before pouring over the set Strawberry layer. Put in the fridge to set.
Place the tin in a little warm water and gently tip the jelly out onto a piece of cling film. Roll into a tight roll from the short side, wrap tightly in the cling film and put in the fridge.
Just before serving, slice into pin wheels using a sharp knife.
