1 x 11.5g sachet Hartley’s Sugar Free Blackcurrant Jelly
300g mixed summer fruits
Mint or raspberry leaves for decoration
1 litre ring mould
Make jelly as directed on pack.
If using strawberries, cut into quarters. Place one third of the fruit in the mould.
Pour over approximately half of the jelly.
Put in the fridge to set.
After about an hour gently add another third of the fruit to the mould.
Pour over the rest of the jelly into the mould.
Put in the fridge to set. When the jelly has set turn out by dipping the mould in a bowl of hot water and turn onto a large plate. Fill the centre with remaining fruit and decorate with mint leaves.
